Meet the founder of Truth and Food
I'm Kathryn Chambers — Registered Dietitian, Registered Practical Nurse, and founder of Truth and Food. I believe people deserve honest, understandable information about what they eat and why it matters.
My story
For many years, I have worked at the place where food, health, behaviour, and real life meet.
My professional experience has included pediatric gastroenterology, hepatology, nutrition support, community nursing, long-term care, research, teaching, health-program leadership, and the ownership and operation of a small retirement home. I have taught health professionals and students, precepted interns, supported patients and families through complex health challenges, and spoken to community groups about nutrition and the modern food environment.
Again and again, I have seen the same problem: people are surrounded by food information, yet they are rarely given the time or tools to understand it.
They may be told to "eat better," but not shown how a grain becomes flour, why an ingredient behaves differently after processing, how marketing influences choice, or why highly rewarding foods can overpower good intentions. They are given instructions without the understanding that makes purposeful change possible.
Truth and Food grew from my desire to change that.
Why "Truth and Food"?
The name Truth and Food reflects a simple belief: people deserve honest, understandable information about what they eat, how it is made, and how it can affect the body, appetite, behaviour, and health.
Truth
Truth means looking past marketing claims, diet trends, confusing headlines, and one-size-fits-all advice. It means asking better questions, examining the evidence, and understanding the reasons behind a recommendation.
Food
Food means returning to nourishment and recognizing where food comes from, what it was originally, how processing may have changed it, and how it fits into real life. It includes learning to read labels while also moving toward more whole foods that need little — or no — label at all.
Truth and Food does not exist to make people afraid of food or to demand perfection. It exists to replace confusion and self-blame with understanding, purposeful structure, and practical support. The Truth and Food mark brings these ideas together: a leaf representing nourishment and food closer to its source, viewed through a lens that represents curiosity, discovery and looking beneath the message.
This is what "Look closer" means at Truth and Food: looking beneath the message, understanding the food, and choosing with greater confidence.
My approach
Evidence-informed
Information is grounded in established nutrition and health science, with references provided for deeper learning where appropriate.
Free from shame
Food choices are shaped by biology, access, culture, stress, finances, habits, marketing, and environment — not simply willpower.
Practical
Education should help people make a decision in a grocery store, kitchen, workplace, or restaurant — not remain trapped in a textbook.
Curious and honest
Good education makes room for questions, scientific uncertainty, and new evidence. It avoids exaggerated promises and oversimplified conclusions.

A personal note
My interest in food is professional, but it is also deeply human. I understand that knowing what to do does not always make doing it easy. That understanding has strengthened my commitment to education that respects the biological, emotional, social, and environmental forces involved in eating.
My hope is that Truth and Food will help people move away from confusion and self-blame and toward knowledge, discernment, and realistic change.
